FINALS!!

Finals have hit for this year.... oh my has it been rough! My math teacher was horrible this semester.... and to top it off math isnt my subject. I loved the rest of my teachers, and they helped me a lot. My goal is to get a GPA of 3.8 and i hope that it comes true. All i've been doing for the past 3 weeks is studying.... :( I can't wait for all my finals to be over.... so i can relax. College life has been great, and i've met a lot of amazing people. I love being a college student.... its AMAZING!!!!

For christmas this year i'm spending it in my hometown... Oakley,UT. The thing that will be weird is that i will be the only kid at my house waking up to see what Santa brought me.... :( I guess thats what you get for being the youngest in your family... oh well!!! The exciting part is that my brother brad get's to call us on CHRISTMAS!!! He will have 5 months left... wow do i miss him!!! Well i hope you all have an amazing christmas this year!!!! MERRY CHRISTMAS!!!!

Oh here is one of my own recipes if you want to try it: Chili Enchiladas

1 can chili
2 cups cheese
10 flour tortillas
1 jar chunky salsa

directions: mix chili and salsa in a pan. turn it up to medium heat, and let it get warm. Grate your cheese into a bowl. Once you've heated the chili and salsa get the flour tortillas and heat them in the microwave for 35 seconds. Heat your oven to 425 degrees. Take a 9 x 13 pan. spray it. then add a cup of your mixture of chili and salsa to each flour tortilla. and put a pinch of cheese in each enchilada. roll it up. Then take the rest of your mixture and pour it over your enchiladas and add the rest of the cheese. Stick it in the oven for 15 min. and serve with your favorite flavor of rice (my personal favorite is chicken rice a roni and then add a can of corn to it) Cut up lettuce and tomatoes, get sour cream and hot sauce to add on top. ENJOY!!! :)

Life at UVU

Well everyone.... i decided i'm going to start a blog about my life right now. I'm currently going to school at Utah Valley University in Orem, UT. It's amazing to be on my own, and i LOVE LOVE the city life! I miss Oakley at times, but i love living so close to many attractions. Well to start out, i moved down to Provo,UT in August of 2011. Not knowing what to expect i jumped right into the swing of things. The first day down in Provo i was welcomed by a wonderful ward, and i already met tons of great people. I live in an apartment with 3 roomates one of which is my cousin Katie. It has been a blast so far.... and i got to meet Katie's NEW boyfriend ( Federico Molina) He is a great guy... and PERFECT for my cousin. Anyways, i decided in the first week that i needed groceries.... oh was i scared. I thought " I'm actually going shopping on my own without my parents?" That was a shocker.... but i can tell you all that it turned out GREAT!!!! :) I soon learned to love the city life... and it all started with my first Slurpee run, and staying up till 4:00 a.m. on a Friday night!!! :) Oh what a thrill it was to actually stay up till 4 in the morning! Ya i know what you all are thinking... Crazy right? haha i can tell you it's a BLAST!!! Then my first day of college was super.... scary!!! Wow.... it was not like high school at all!!! I can tell you that i love college with all my heart!!! I have met so many great friends from all over... and we get crazy at times haha. I am currently studying to be a Culinary Arts major!!! I am loving the program so far, and my general classes are going well. I'm so excited to start cooking, and to be able to share my recipes with all of you!!! :) So with the city life, 16 credit hours, and my friends..... COLLEGE IS THE BOMB!!! :) I now know what it's like to live on my own, and i am loving every minute of it!!! I also love when my parents come down to visit me, and we go out to dinner as a family!!! Life as a college student= AMAZING!!!! :)
